        Pere Madernassa

        Madernassa is a variety of cooking pear originating in Piedmont, in the Roero area.
        It is in this land that the mother plant, which originated in the late 1700s on the Cascina Gavello property and was felled in 1914 at the age of 130 years, grows. It is widely believed to derive from a natural cross of the Martin Sec cultivar with the wild one.
        Like many indigenous species, it remained unknown for a long time, with use limited to local farmers who appreciated it for its crunchiness and the aromatic enhancement given by cooking it in both wine and baking.
        Thanks to its crispness, this hand-cut pear preserved in water and brown sugar, without added preservatives, lends itself to many uses and recipes: cut into thin slices to accompany cheese with fresh herbs and honey, suitable for preparing delicious risottos or the many versions of cake, or simply cooked in a good red wine for a delicious dessert.

        ALCOHOLIC FERMENTATION

        The preparation of fruit in syrup has ancient origins, linked to the discovery of the alcoholic fermentation, in fact, the sugar naturally present in the fruit and the little added cane sugar are able, through fermentation processes, to become alcohol and preserve the raw fruit, cut into pieces, in the liquid that is formed.

        These pears are low in calories (30kcal per 100g), rich in insoluble fibre and contain a discrete amount of potassium.

        They have an index of rather high satiety and are therefore suitable as an afternoon snack or at the end of a light meal.
