        Vegetable velouté

Velouté is always a great idea if you want to bring a tasty and enveloping dish to the table, a real vegetable-based culinary treat for cold evenings, an ideal dish for an intimate family dinner.
It has a soft and silky texture that invites a creamy and tasty bite.
We use only our fresh seasonal vegetables rich in minerals and vitamins, enriching them with a small amount of pea flour, which, in addition to its thickening function, provides the right amount of protein.
Heat at a low temperature and if a lighter consistency is desired, add vegetable broth to taste. Extra virgin olive oil and the addition of toasted bread, oil seeds and/or dried fruit grains will provide the finishing touch.
