It is an old variety of English origin, selected at the end of the 18th century and spread in Italy mainly in the Po plain.
Very fresh and juicy, with its firm, compact flesh, it is the ideal pear for syruping.
Cut into pieces while retaining the peel, it is not cooked to preserve its nutritional characteristics and is preserved in water and a little cane sugar, with no added colouring agents or preservatives. It can be served to accompany strong-tasting mature cheeses, such as parmesan or pecorino, excellent with porridge or ice cream, or for baking desserts. For a quick dessert, slice the pears, brush with a little apricot jam, sprinkle with cinnamon and microwave for a few minutes.

ALCOHOLIC FERMENTATION
The preparation of fruit in syrup has ancient origins, linked to the discovery of the alcoholic fermentation, in fact, the sugar naturally present in fruit and the little added sugar are able, through fermentation processes, to become alcohol and preserve the raw fruit, cut into pieces, in the liquid that is formed.
