A very old preparation that has spread over time, especially in the areas where cherries are most cultivated, forgotten by many but in reality truly exquisite: an authentic, prized and irresistible delicacy that cannot be missing from the larder.
The cherries must be picked at the right time because they must be firm, ripe and perfectly healthy. After being thoroughly washed, they are potted: the sugar naturally present in the fruit and the little cane sugar added together with the wine are able, through fermentation processes, to store the fruit in the liquid that forms, so that they are available at any time of the year.
Cherries are great eaten on their own, perfect after dinner, or they can be used as a versatile ingredient in the preparation of chocolates, cakes and spoon desserts or to enrich a good ice-cream sundae.

FROM FRUIT TO STALK
Cherries are not only good, they also boast several beneficial properties. They are a mouth-watering fruit but also friend of the line100 g contain only 38 kcal. They contain good doses of melatonin which helps you rest better, counteracting insomnia. They increase the sense of satiety and are therefore an ideal fruit as a hunger-breaker by virtue of the low glycaemic index.
In addition fibre and malic acid content, help the intestine to function better and regularise digestive functions.
Cherries are rich in anthocyanins which give the fruit its characteristic bright red colour and have strong anti-inflammatory activity. They also contain Vitamin C and A, folic acid, calcium, potassium, magnesium, phosphorus and flavonoids, important substances in the fight against free radicals.
No less important are the virtues depurative e diuretics that are contained in the fruit, but especially in the peduncle. The latter can also be used to prepare a detox decoction.
With the cherry pits you can stuff a cushion, to be used hot for muscle aches and cold for bruises.
