        BIODIVERSITY AND RESPECT FOR THE NATURAL ECOSYSTEM

        Crops

        The village of Fontana is surrounded by a special territory, protected by an amphitheatre of hills that differ in exposure, microclimate and soil type. The agricultural landscape is spread out on different levels, articulated in ancient crags connected by steps and stone walkways: an evocative conformation that is challenging to cultivate, especially due to the natural slope of the land.

        The flat areas, about one hectare, house the paddocks for our horses and surround the 17th century villa that dominates the property.

        With the support of expert agronomists, we have selected numerous varieties of fruit and vegetables, with the aim of enhancing biodiversity and rediscovering the wealth of flavours that nature has to offer. In order to respect the ecosystem and preserve the elegance of the old estate, we have chosen a low-impact agricultural system, with varieties that develop moderately and a natural meadow that is mown periodically and used as fodder.

        Completing our agricultural reality is an olive grove in Sardinia, in Nurachi, between the Cabras pond and the western coast of the island. From these plants, cared for using natural methods and harvested exclusively by hand, we obtain a genuine extra virgin olive oil, cold-pressed using mechanical techniques to preserve its quality and purity.

        THE NATURE OF PLANTS

        Our cultivations follow completely natural methods and are cared for by hand. We do not use pesticides, plant protection products or synthetic fertilisers: we prefer agronomic techniques that respect the rhythms of the earth and preserve the vitality of the soil.
        Crop rotation allows us to avoid monoculture and maintain a natural balance, favouring stronger, healthier and more resistant plants. Only in specific cases do we use simple vegetable or mineral preparations, which are always permitted in natural farming methods.

        Every day we harvest vegetables, fruits, herbs and officinal herbs by hand, respecting their balsamic time, when their properties are at their peak.
        Immediately after harvesting, the raw materials are either processed by hand without refining, or carefully dried, as in the case of herbs and edible flowers, to keep their aromas and characteristics intact.

        Our goal is simple: to obtain products that are true, pure and full of flavour, the fruit of an agriculture that cherishes nature and not force it.
